I found this info on the cayman government site.
If you are American, British, Canadian, a citizen of another Commonwealth country (with the exception of Bangladesh, Gambia, India, Jamaica, Pakistan, Sri Lanka, Cameroon, Ghana, Nigeria, Sierra Leone and Uganda) or a national of any of the following you will not require a Visa:
Andorra, Argentina, Austria, Bahrain, Belgium, Brazil, China (peoples republic) citizens holding Hong Kong (SAR China) passports only, Chile, Denmark, Ecuador, Finland, France, Germany, Greece, Iceland, Irish Republic, Israel, Italy, Japan, Kuwait, Liechtenstein, Luxembourg, Mexico, Monaco, Netherlands, Norway, Oman, Panama, Peru, Portugal, San Marino, Spain, Sweden, Switzerland, United States of America & Venezuela. All other countries not noted above should contact the nearest British Consulate or High Commission Office to inquire about entry requirements or receive applications for Visas.
If she is holding a hong kong passport it shouldn't be a problem getting her into the cayman's. I am also assuming that she has a student visa of some sorts for the united states. You might want to check the State Department's website or get in touch with your AFS representative. I know that there are many different kinds of visas - some that allow for mulitple trips out of the country and some that don't. You would need to check out her Visa type.
